High Fat

A yes on High Fat means you are looking at at least a Paleo if not a Keto type diet. Also, look at the Fung Program. Fat has been vilified in this country, backed by extremely bad science. (read Gary Taubes: Why We Get Fat) We need good fat in our diet, some of us need more than others! Good fats are avocados, coconuts, olives, nuts, and all of their derivatives (the oils and butters), as well as dairy fat (butter and cheese – unless you cannot deal with cow dairy, or any dairy at all) and rendered fat (lard from grass fed animals).

An important caveat: if you have had your gall bladder removed, your ability to deal with fats has been compromised, and you no doubt have been told to eat low fat. This is not a good idea! What you need is to pay more attention to when you eat fat. The gall bladder delivers bile to the liver so that it can deal with fat any time you eat it.

When you don’t have a gall bladder, the liver acts up – unless you are eating fat at a regular time. Here is the secret: the liver still makes bile, but it only makes it on schedule. So if you regularly eat lunch at noon, and you eat fat at noon, you will not have a problem with digesting it. The problem comes when there is a party at 4:00, and you eat fat then. The liver has not produced bile for a 4:00 feeding, it’s waiting for your regular supper time! So first, pay attention, and don’t eat much fat at the party! Second, the one exception is coconut oil. Coconut oil has a different chemical composition than other oils, and it does not hit the liver like the other oils do. So if someone has made a scrumptious dessert for the party using coconut oil, enjoy! You won’t have any trouble.
